Ingredients
Roasted Cauliflower:
1 head cauliflower, cut into florets
1 tbsp organic Pure Indian Coconut Oil, melted
1 tsp organic garlic powder
1 tsp organic onion powder
Sauce:
Zest of 1 lemon
Juice of 2 fresh-squeezed lemons (about 2 tbsp)
2 tbsp organic tahini
fresh parsley garnish (optional)
Preparation
1. Prepare the Cauliflower: Preheat your oven to 425°F. Toss the cauliflower florets onto a large bowl with a drizzle of melted coconut oil, then sprinkle on the harissa seasoning, garlic powder, and onion powder. Toss everything together until evenly coated and arrange the florets in a single layer on a baking sheet.
2. Roast to Perfection: Bake for 15-20 minutes, or until the cauliflower is tender and slightly caramelized at the edges.
3. Make the Sauce: While the cauliflower is roasting, whisk together all the sauce ingredients in a small bowl until smooth. If the consistency is too thick, add a splash of water until it reaches your desired consistency.
4. Serve & Enjoy: Drizzle the creamy harissa sauce over the warm roasted cauliflower, garnish with freshly chopped parsley, and serve immediately.
